This is my collection of Amish Friendship Bread recipes from various sources...

AMISH FRIENDSHIP BREAD STARTER

DAY 1: In a large glass or ceramic bowl, mix (with a wooden spoon): 1 cup each flour, sugar & milk. METAL WILL STOP THE NATURAL YEAST REACTION.

DAY 2-5: Leave alone, loosely covered, while mixture bubbles. DAY 6: Stir once.
DAY 7: Stir in 1 cup each flour, sugar & milk.

DAY 8-9: Stir once each day.

DAY 10: Your starter is now ready to use. Feed before or after removing amount needed for your recipe or giving away with 1 cup each flour, sugar and milk. KEEP AT LEAST ONE CUP STARTER TO CONTINUE FEEDING EVERY FIFTH DAY.

DAY 11-14: Stir DAY 15: Feed

DAY 16-19: Stir DAY 20: Stir etc.

-- If you miss a day, it doesn't matter.
-- If you want a break, you can refrigerate the starter.
Continue to stir & feed. Bring to room temp before using.
-- Freeze up to 6 weeks. Don't feed just before freezing.
Thaw, feed & wait for bubbles to form again before using.
-- If it smells bad or turns green, discard & start over.
-- If you keep it going, transfer to a temporary container every thirty days while you clean up & scald the original container.

LOW FAT FRIENDSHIP BANANA BREAD

2 cups flour..............1 cup sugar
1 tsp. cinnamon...........1 tsp. baking powder
1/2 tsp. baking soda......1/2 tsp. salt
1 cup Friendship Starter..1/4 cup vegetable oil
3/4 cup mashed bananas....3/4 cup egg substitute

Preheat oven to 350. Grease two 9 x 5 x 3 inch bread pans & sprinkle with cinnamon/sugar combo. Combine dry ingredients
in small bowl. In large bowl, combine remaining ingredients. Stir in flour mixture until moistened. Pour into pans, sprinkle with cinnamon/sugar. Bake 40-50 minutes. Cool in pans 10 minutes; Remove & cool completely on wire racks.

PATTI'S AMISH FRIENDSHIP BREAD

To 1 cup Starter, add:
1 cup oil.........4 eggs
1 cup sugar.......2 tsp. vanilla
1 large instant pudding mix
2 cups flour......1 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon...1 cup raisins
1 cup chopped nuts

To the remaining batter, add oil, eggs, sugar, vanilla & pudding mix. Blend well. Add the combined dry ingredients, nuts & raisins, mix well & put into 2 well greased 9x5 loaf pans that have been greased & sprinkled with cinnamon & sugar. Bake 6070 minutes at 325 degrees F. For a really GREAT taste, use chocolate pudding & chocolate chips in place of the raisins.

NOTE: Cut the fat by using Egg Beaters in place of the eggs & applesauce for all or part of the oil.

To one cup of batter, add:
2/3 cup oil..............3 eggs
1 cup sugar..............2 cups flour
1-1/2 tsp. baking soda..1-1/4 tsp. baking powder
1/2 tsp. vanilla.........1-1/2tsp. cinnamon
1 cup raisins (or chopped apples or peaches)
1 cup nuts*

*Substitute dried fruit & cut the fat & calories BIGTIME!)

Substitute applesauce for all or part of the oil. To cut fat even more, substitute Egg Beaters for eggs. Mix well & put into two 9x5 loaf pans that have been greased & sugared. Bake at 350 degrees F for 50 minutes.

FRIENDSHIP CAKE

1 cup Friendship starter......2/3 cup vegetable oil
2 large eggs..................2 tsp. vanilla extract
2 cups sifted flour...........1 cup sugar
2 tsp. baking soda............2 tsp. cinnamon
1/2 tsp. salt.................1/2 cup chopped nuts
1 20 oz. can crushed pineapple, drained
1/2 cup raisins (optional)

Preheat oven to 350 degrees F. Grease & flour a 13 x 9 x 2 inch baking pan. In a large bowl, mix starter, oil, eggs, vanilla, flour, sugar, baking soda, cinnamon & salt until dry ingredients are moistened. Stir in pineapple, nuts & optional raisins. Pour into pan. Bake 35-40 minutes or until a wooden pick inserted in center comes out clean. Cool completely on a wire rack.
